Portion guide & what’s included
Hot buffet: one main-course buffet portion per guest, plus one pasta and one salad portion if selected. With two mains, portions are divided between them in half-tray increments. This does not provide a full portion of every main for every guest.
Sandwich spread: one whole sandwich per guest, plus any selected sides. Each small platter has 6 sandwiches cut into 18 pieces; each large has 12 sandwiches cut into 36 pieces.
Selected extra-food percentages increase the portion target before rounding. Appetizers and extras are additional; they do not replace a main meal. Manual quantity changes override recommendations. Serving estimates assume a mixed buffet and should be confirmed with the shop.
